Do you think everyone was rich and lived in fancy houses on the Palatine hill? The roman empire alone covered almost all of europe and a lot of africa. There were bound to be some wooden huts somewhere. Same goes for Greece. Although I don't think Greece counts as an empire during it's golden age since they mostly stayed in the mediterranean.

 

We didn't do very much research , most of the buildings were supposed to be medieval because... reasons
